Vegan Ambrosia


INGREDIENTS:
  • 1 banana
  • 1/4 cup almond milk
  • 3 teaspoons lemon juice
  • 1 pear, diced
  • strawberries, diced
  • 1 orange, wedges cut into quarters
  • 1/4 cup coconut
  • about 20 vegan marshmallows, halved
METHOD:
  • Combine banana, almond milk in lemon juice in blender until smooth
  • Mix fruit, sauce and coconut
  • Stir in marshmallows

Jo, who commented below, gave me the vegan marshmallows so when I made the ambrosia I emailed her to come and get some I was saving for her right after work THAT DAY or there would be none left because I was having a VERY hard time staying away from it! I had been looking at recipes to make ambrosia but then decided to just give it a shot with stuff I had on hand and it worked! The banana did not turn brown with the lemon juice in it but the marshmallows do start to dissolve after a while so best to add those in right before serving.
