Vegan Peanut Butter Banana Chocolate Chip Cookies


Adapted from Daily Vegan Meal

INGREDIENTS: 
  • 1 cup whole wheat flour
  • 1 cup quick oats, finely ground
  • 2 teaspoons baking soda
  • 4 bananas, mashed
  • 1 cup peanut butter
  • 1/3 cup brown sugar
  • 1/2 cup almondmilk
  • 2 teaspoons vanilla extract
  • 1 cup vegan chocolate chips
METHOD: 
  • Combine flour, oats and baking soda
  • In a separate bowl blend mashed bananas, peanut butter, brown sugar, almondmilk and vanilla extract with an electric hand mixer
  • Stir dry ingredients into wet ingredients until combined
  • Stir in chocolate chips
  • Scoop dough into  about 1.5 tablespoon mounds about 2 inches apart on parchment lined baking sheet
  • Bake at 350 for 12 minutes
  • Cool on racks
  • Makes 3 dozen cookies

Banana Pear Cake


Adapted from The Vegan Project

INGREDIENTS: 
  • 1 1/2 cups flour
  • 1 cup oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts
  • 4 pieces of fruit, any combination of bananas and pears
  • 1/3 cup oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla

METHOD:
  • Combine dry ingredients in large mixing bowl
  • Combine fruit, oil, maple syrup and vanilla in food processor
  • Stir liquid ingredients into dry ingredients
  • Pour into greased loaf pan
  • Bake at 350 degrees for 45 minutes

Mango Banana Bread

INGREDIENTS:
  • 3 bananas
  • 1/4 cup Earth Balance coconut spread, melted
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup almond milk
  • 1 cup whole wheat flour
  • 1 cup unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 ripe mango, cut into chunks
METHOD:
  • In food processor combine bananas, coconut spread, sugar, vanilla and almond milk
  • Combine flours and spices in a large bowl
  • Mix wet ingredients into dry ingredients until just combined
  • Fold in mango chunks
  • Bake at 350 degrees in greased loaf pan for 1 hour
  • Cool in pan for 20 minutes before removing from pan to finish cooling on wire rack

Vegan Ambrosia


INGREDIENTS:
  • 1 banana
  • 1/4 cup almond milk
  • 3 teaspoons lemon juice
  • 1 pear, diced
  • strawberries, diced
  • 1 orange, wedges cut into quarters
  • 1/4 cup coconut
  • about 20 vegan marshmallows, halved
METHOD:
  • Combine banana, almond milk in lemon juice in blender until smooth
  • Mix fruit, sauce and coconut
  • Stir in marshmallows

Cocoa Banana Bread

INGREDIENTS:
  • 1 1/4 cups whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup shredded unsweetened coconut
  • 1/3 cup unsweetened cocoa 
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda

  • 1/2 cup firmly packed brown sugar
  • 2 bananas, mashed
  • 1/2 cup almond milk
  • 5 tablespoons vegan margarine, melted
  • 1 teaspoon vanilla
METHOD:
  • Combine dry ingredients in large bowl
  • Blend wet ingredients in food processor
  • Stir wet ingredients into dry ingredients until combined
  • Spoon batter into greased loaf pan
  • Bake at 350 degrees for 50 minutes

Parsnip Cookies

Adapted from Act Vegan and Vegetarian Society

INGREDIENTS:
  • 1 cup unbleached flour
  • 1 1/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/3 cup coconut spread, melted
  • 1/2 cup organic brown sugar
  • 1 medium banana
  • 1/2 cup orange juice
  • 1 teaspoon vanilla
  • 2 small parsnips, grated
  • 1/2 cup chopped almonds
  • 1/2 cup raisins
METHOD:
  • Mix dry ingredients in a large bowl
  • In food processor blend melted coconut spread (or oil), brown sugar, banana, orange juice and vanilla until smooth
  • Stir wet ingredients in with dry ingredients until combined
  • Stir in grated parsnips, almonds and raisins
  • Form into heaping tablespoon size cookies and place on greased baking sheet with some space in between because they will expand and rise
  • Bake at 350 degrees for 15 minutes
NOTES:
This was supposed to be a cake but my metric conversions might have been off since the dough was way too dry for cake batter.  So I added in the almonds and raisins and made it into cookies instead.

X-Treme Banana Bread

INGREDIENTS:
  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1/2 cup Earth Balance Coconut Spread, melted
  • 1/2 cup sugar
  • 3 bananas
  • 1/4 cup almond milk
  • 2 carrots, shredded
  • 1/2 cup shredded coconut
  • 1/2 cup dried cherries, halved or quartered
  • 1/2 cup chopped almonds
METHOD:
  • Preheat oven to 350 degrees
  • Grease loaf pan
  • Combine flours and spices in a large bowl
  • Combine vanilla, Earth Balance, sugar, bananas and almond milk in food processor
  • Combine wet ingredients with dry ingredients
  • Stir in carrots, coconut, cherries and almonds
  • Spread evenly into loaf pan
  • Bake 1 1/4 hours or until done in center

Peanut Butter Banana Cookies

Adapted from Soy Free Vegan

INGREDIENTS:
  • 2 cups whole wheat flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup peanut butter
  • 1/2 cup maple syrup
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • unsweetened coconut
METHOD:
  • Mix flour, baking powder and baking soda in a large bowl
  • Combine peanut butter, maple syrup, banana, vanilla and cinnamon in a food processor
  • Mix the wet ingredients in with the dry ingredients until just blended
  • Form 1 inch balls of dough, dip in coconut, place on greased cookie sheet and flatten with a fork
  • Bake at 350 degrees for about 10 minutes or until edges start to turn brown
NOTES:
Add 1/4 cup brown sugar for sweeter cookies but I find them sweet enough with just the maple syrup.

Vegan Banana Walnut Bread

Adapted from About.com Vegetarian Food

INGREDIENTS:
  • 1/3 cup Earth Balance Coconut Spread, microwaved about 15 seconds to melt
  • 1/2 cup sugar
  • 1/2 cup almond milk
  • 1 teaspoon vanilla
  • 3 small bananas, mashed
  • 1 1/2 cup whole wheat flour
  • 1/2 cup unbleached flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped walnuts
METHOD:
  • Beat together melted coconut spread and suger
  • Beat in milk and vanilla
  • Stir in mashed bananas
  • Combine flours, baking powder and baking soda; stir into wet ingredients
  • Fold in walnuts
  • Pour into greased and floured loaf pan and bake at 350 degrees for 1 hour 10 minutes

Carrot Walnut Cookies

Adapted from Whole Foods Market

INGREDIENTS:
  • 1 cup raw unsalted walnuts
  • 1 cup old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup whole wheat flour
  • 1 1/4 teaspoon baking powder
  • 1 1/4 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 2 carrots, grated
  • 1 unpeeled apple, grated
  • 1 very ripe banana, mashed
  • 1/4 cup orange juice
METHOD:
  • Preheat oven to 350 degrees
  • Line 2 baking sheets with parchment paper
  • Combine walnuts, oats and raisins in a food processor and pulse until finely ground
  • In a large bowl combine flour, baking powder, cinnamon and ginger
  • Stir in ground walnut mixture
  • Stir in grated carrots, apple, banana and orange juice
  • Drop by rounded tablespoons on baking sheets and flatten slightly with back of fork
  • Bake until tops and bottom are lightly browned, 20-25 minutes
  • Makes about 2 dozen cookies
