INGREDIENTS:
- 1 banana
- 1/4 cup almond milk
- 3 teaspoons lemon juice
- 1 pear, diced
- strawberries, diced
- 1 orange, wedges cut into quarters
- 1/4 cup coconut
- about 20 vegan marshmallows, halved
- Combine banana, almond milk in lemon juice in blender until smooth
- Mix fruit, sauce and coconut
- Stir in marshmallows
OMG! That salad looks absolutely delish. Mmmm. Now I think a trip to Whole Foods is in order: vegan marshmallows!
ReplyDeleteJo, who commented below, gave me the vegan marshmallows so when I made the ambrosia I emailed her to come and get some I was saving for her right after work THAT DAY or there would be none left because I was having a VERY hard time staying away from it! I had been looking at recipes to make ambrosia but then decided to just give it a shot with stuff I had on hand and it worked! The banana did not turn brown with the lemon juice in it but the marshmallows do start to dissolve after a while so best to add those in right before serving.
