INGREDIENTS:
- 1/3 cup Earth Balance Coconut Spread, microwaved about 15 seconds to melt
- 1/2 cup sugar
- 1/2 cup almond milk
- 1 teaspoon vanilla
- 3 small bananas, mashed
- 1 1/2 cup whole wheat flour
- 1/2 cup unbleached flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup chopped walnuts
- Beat together melted coconut spread and suger
- Beat in milk and vanilla
- Stir in mashed bananas
- Combine flours, baking powder and baking soda; stir into wet ingredients
- Fold in walnuts
- Pour into greased and floured loaf pan and bake at 350 degrees for 1 hour 10 minutes
