INGREDIENTS:
- 3 bananas
 - 1/4 cup Earth Balance coconut spread, melted
 - 1/2 cup sugar
 - 2 teaspoons vanilla extract
 - 1/4 cup almond milk
 - 1 cup whole wheat flour
 - 1 cup unbleached flour
 - 1 teaspoon baking soda
 - 1 teaspoon ground cinnamon
 - 1/2 teaspoon ground ginger
 - 1/2 teaspoon salt
 - 1 ripe mango, cut into chunks
 
- In food processor combine bananas, coconut spread, sugar, vanilla and almond milk
 - Combine flours and spices in a large bowl
 - Mix wet ingredients into dry ingredients until just combined
 - Fold in mango chunks
 - Bake at 350 degrees in greased loaf pan for 1 hour
 - Cool in pan for 20 minutes before removing from pan to finish cooling on wire rack
