INGREDIENTS:
- 1 pound Yukon Gold potatoes, peeled and diced
- 1 pound sweet potatoes, peeled and diced
- 1/2 vegetable bouillon cube dissolved in 1/2 cup water
- 2 tablespoons Earth Balance margarine
- 1 tablespoon chopped garlic chives
- Boil potatoes and sweet potatoes until tender; drain
- Mash potatoes with bouillon and margarine
- Stir in garlic chives
